Lindt Truffle Chocolate Cupcakes

I know this isn’t a low carb recipe but I have been wanting to bake cupcakes for so…long! Therefore, the cupcakes are for my hubby and neighbors. I’m not going to lie to you…Yes I want to eat one! But really the joy is seeing others enjoy them, and let me tell you…they really enjoyed them! My hubby kept stating that these are the BEST cupcakes he has ever had! This is a very moist cupcake with the surprise of the Lindt Chocolate Truffle in the middle. The cupcake could be topped with your choice of frosting, but I chose my mom’s cream cheese frosting. This makes a wonderful pair but the possibilities are endless!

1 box devils food cake
1 box instant vanilla pudding (small box)
4 eggs
1/2 cup oil
1/2 cup water
1 cup sour cream
Milk chocolate Lindor truffles by Lindt (approx 24)

Cream cheese frosting
1 (8oz) pkg cream cheese
1/2 cup butter or margarine
2 tsp vanilla
1 1b box powdered sugar


Unwrap milk chocolate Lindt truffles and place in a bowl for use later. In a separate bowl, add ingredients and mix well.

Fill cupcake liners 2/3 full.

Bake at 350. After 5 minutes, lightly press a Lindt truffle into each partially baked cupcake.

Let the cupcakes bake an additional 13 minutes (total bake time 18 minutes)

Cool completely, then frost with cream cheese frosting.
